Draniki is a traditional Belarusian recipe for a classic potato pancake that's a staple of the cuisine. The full recipe is presented here and I hope you enjoy this classic Belarusian version.

Peel the potatoes and grate into a bowl then add the flour and stir in the milk and egg. Season with salt then stir to combine.
Meanwhile, heat oil in a large frying pan and add the potato mixture by the tablespoon. Spread out with the back of a spoon to form small individual pancakes (no more than 10cm in diameter). Cook for about 4 minutes (or until nicely crisped and brown) then flip over and cook on the other side.
These should be served hot, accompanied by sour cream.
